Cool and Easy No Bake Strawberry Pie

Ellie, I could not agree more:) If you don’t know me, you may not know that one of my guiltiest pleasures in life is trash TV. Some of my favorite shows are Vanderpump Rules, Family Karma, and I love a good KUWTK. Anybody else? One of my other confessions is probably going to surprise you though…..I don’t like pie. I know it’s weird!!! There is something about pie crust that I just don’t like. My kids tell me I’m not American. That is what drew me, a non-pie-lover, to this no bake strawberry pie recipe though! There’s no traditional pie crust!!! It’s a graham cracker crust that is just perfect:) Especially in these hot summer days when the last thing you wanna do is stand over a hot oven! So today, I wanted to share this no bake strawberry pie recipe with all of my non-pie-lovers and those that may not wanna stand over that hot oven;)

No Bake Strawberry Pie Recipe:

  • Ingredients:
    • Round pie plate
This KitchenAid egg slicer has many uses! Great for this pie:)
  • Directions
    1. Crush 12 sheets of graham crackers (fine) in a Ziploc bag using a rolling pin or add them to a food processor.
    2. Add 1/4 cup sugar to mix.
    3. Add melted butter. Make sure it’s mixed well.
    4. Pat the graham cracker mixture into the pie pan
      1. you can use your hands or the back of a spoon for this
    5. Chill this crust for about an hour.
    6. Cream together the room temperature cream cheese and powdered sugar.
    7. Fold in the Cool Whip to the cream cheese mixture.
    8. Add strawberry glaze to the bottom of the chilled pie crust (use as much as you like).
    9. Add the cream cheese mixture to the top of the glaze.
    10. Put some strawberries on top to make it pretty!:)
The finished product!! It tastes even better than it looks!;)

Things this no bake strawberry pie taught me…

I know it seems weird to say, but I really learned something from this strawberry pie! As I started writing this blog post, I realized that several of my guilty pleasures were kinda like this strawberry pie: cool, easy and not a lot of fuss. They included:

Simple things really are the best things….

I’m really grateful that the simple things in life are the most pleasurable. Like strawberries, cream cheese and a graham cracker crust. There’s nothing fancy about this recipe or about any of my other guilty pleasures. I like to watch those crazy shows about celebrities, but at the end of the day, I’m really, really glad for my simple life on my hobby farm on Shiloh Road. So, all in all, I’m guilty of many things, but I’m really glad that appreciating the life I live is one of them.
