DILLY HERB CHEESE BREAD RECIPE

STOP RIGHT THERE!!! I know exactly what you are thinking!! You’ve skipped straight to the recipe*, noticed it calls for dry active yeast, and thought to yourself, “This recipe is too hard! I’m not trying it!”.
I know because I used to be the exact same way!! If a recipe called for one ingredient that I hadn’t used before, I wouldn’t try it. What I’ve discovered though, is that most recipes are actually pretty easy. You just gotta give it a try! And you get that renewed sense of I-am-a-true-woman-and-can-do-anything-hear-me-roar every time you perfect a new recipe:) Especially one like homemade bread!!
Besides, when was the last time you tried something for the first time?? ๐
Ingredients
3/4 c. milk
1 1/2 T. dill seeds
1 T. honey
1/4 c. vegetable oil
3 eggs, room temperature, blended
2 1/2 c. whole wheat flour
1 pkg. dry yeast
1 1/2 t. salt
3 1/2 c. packed sharp cheddar cheese, grated
3 T. fresh dill, chopped
Directions
- Bring milk, dill seeds and honey to a simmer in a small saucepan; allow to cool until just warm. Whisk in oil and eggs. In a separate bowl, combine 1 1/4 cup flour, yeast, salt and 2 cups of the cheese. Add warm milk mixture and fresh dill and beat with electric mixer for 3 minutes. Add remaining flour and beat 2 more minutes. Cover bowl with plastic and let the dough rise in a warm area about 75 minutes, or until doubled in size. Spoon half of batter in a greased 9″x5″ loaf pan. Sprinkle remaining cheese over batter. Cover with remaining batter and smooth the top. (Do not force the batter down.) Cover and allow to rise another 30 minutes. Bake in a 350 degree oven for about 45 minutes, or until bread is golden and makes a hollow sound when tapped.

This bread would also make a wonderful gift for a friend. Just wrap a strip of wax paper around it, secure the paper with jute string and tuck a piece of fresh dill under the knot.
And that’s it! Really! Overall time is a little over two hours, so it is one that you need to plan for. For me it was a great one to just start when I knew I was going to be cleaning the house anyway. It did all the rising its own while I was busy vacuuming! Oh, a mother’s work is never done. It makes it a little easier though when you have something this tasty to end the day with;) And like I said, the feeling of accomplishment I get after tackling a new recipe is so satisfying!!
