Easy Pear Cake
If a season were a person, my favorite quality about fall would be it’s food!! The best foods are made in the fall, I swear! All the foods are getting warmer, have sweet notes of cinnamon and don’t get me started on the pumpkin spice!!!! This super easy pear cake is one of those decadent fall desserts that I just had to share with you guys!
So I got this lovely recipe from the Country Door’s Gooseberry Patch cookbook, and you can get your own copy right here! There are dozens of tried and true, delicious, old fashioned recipes in here that will have everyone asking you for “that recipe”!!
Easy Pear Cake Recipe
Ingredients:
Cake:
- 3 cups pears, cored and diced
- 2 cups + 1 tbsp sugar, divided
- 3 eggs beaten
- 1 1/4 cups canola oil
- 3 c flour
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp vanilla
- 2 tsp cinnamon
- Optional pecans
Frosting:
- 1/2 cup butter
- 3 tbsp milk
- 1/2 cup brown sugar
- 1 1/2 cups powdered sugar
1) In a medium bowl, sprinkle the 1 tbsp of sugar over the pears, mix gently and set aside.
2) Beat the eggs, oil and remaining sugar with an electric mixer on medium speed until blended.
3) Combine flour, baking soda and salt in a separate bowl.
4) Add this dry mixture to the egg mixture. Beat on low speed until combined.
5) Fold in the vanilla, pears and pecans, if you’re using them.
6) Pour batter into greased bundt cake pan and bake at 350 for 1 hour. While this is baking, you can whip up your frosting!
7) Melt the butter in a saucepan over medium heat. Add the milk and brown sugar. Bring this to a boil. Then let this cook over low heat for 2 minutes. After that 2 minutes, beat in the powdered sugar. Once this is combined, set aside and let cool.
7) Take the cake out of the oven and cool on wire rack for 15 minutes. Spoon frosting on top and enjoy!
