No Bake Lemon Eclair Cake
Happy Spring!!!! I don’t know about you, but I was so happy to see Winter leave! I am a warm weather chick! As I looked around my little hobby farm and saw all the new buds and bright pops of color, I thought a no bake lemon eclair cake was the perfect dessert for this first-day-of-Spring:) It is a super easy, light, cool and just-sweet-enough dessert to kick off all of the berry flavored desserts that I’ll soon be making in these warmer months:)
Ingredients for No Bake Lemon Eclair Cake:
- 1 box of Graham Crackers
- 1 large tub of Cool Whip
- 2 boxes Instant French Vanilla Pudding
- Milk (enough to make the 2 boxes of pudding)
- 1 container lemon Frosting
- 9×13 pan
Steps:
- Pour mIlk into bowl
- Add 2 boxes of instant pudding
- Whisk it all up!
- While waiting for the pudding to chill, layer a 9×13 pan with graham crackers
- Once pudding mixture is set, take it out of the fridge and combine it with the cool whip.
- Now add half of the pudding mixture to the pan and spread evenly
- Add another layer of graham crackers
- Add another pudding layer
- Add a third layer of graham crackers
- Melt your container of icing just slightly in the microwave. (about 10 seconds) Spread it evenly over last layer of graham crackers
- Chill in fridge about 8 hours and you are ready to go!
